Small Raw Fish should be Eaten Whole

Lately I have been lucky at the nearby wet market to come across very fresh dilis (small, anchovy like fish). These small fish deserve to be eaten whole merely dipped for a few minutes in organic coconut vinegar or by adding some small slices of ginger and onions, a dish we call “kinilaw”.

Kinilaw na dilis“Kinilaw” means “kinain ng hilaw” or “eaten raw”.  It is chemically cooked, really.  You let the organic coconut vinegar, in our case, Lola Conching’s Vinegar turn the dilis fish from transparent to a little white.  Then you will know the fish is ready to eat.  This takes around 5 to 10 minutes.  Some people add lots of calamansi, a philippine citrus which acts like a lemon, but tastes better.

So at the meal I just photographed, our cook prepared a batch of dilis where she painstakingly removed the head and the bones so all you have left is meat.  And I asked for another batch which just used the whole fish.  I tasted both batches.  Guess which got scraped, finished off to the last fish?  The batch with the whole fish, eaten with bones and head!  I just found the tummy bitter to I remove the tummy intestines before I eat the fish though.

In my view, the batch without the head and the fish bones taste too acidic.  It’s like I can’t eat more than a few bites of them.  The dilis fish without the head and bones seems unbalanced.  But with the fish head and the bones, it had just the right crunch, and I could eat a lot of it, yummy.

My mother in law says it is because of the calcium in the bones.  I also think it could be that much fish fat and bones are also in the head.  Maybe this is what Dr. Hulda Clark is saying when Weston Price observed the healthy tribes living beside the sea had almost perfect teeth because of eating a lot of organic calcium from fish.  This is how you eat calcium from the fish, eat small fish whole!  What a great discovery.

TV survivalist Bear Grylls shows us how easy it is to catch a wild salmon on a shallow stream.  What was really great to know was that you need not remove the scales of the salmon to eat them.  Just eat them alive.  Yummy, the freshest salmon you could possibly eat.

This is a dream I could shoot for.  Someday, earn enough money, go on a trip to Alaska to catch wild salmon with your bare hands and eat them on the spot.

Since January 2008 I’ve been on a raw paleolithic diet.  From a raw fruitarian diet in December 2007, then switching to a somewhat Wai Diet on January 2008 with the addition of raw fish and raw egg yolks.  Then around march I wanted to expand my taste buds to land animals, beginning with raw beef.

Raw beef in Manila is great.  It is freshly slaughtered beginning 11 pm at night, then sold to you fresh in the morning.  The affordable popular cuts are top round and sirloin.

I promised my kids this morning we would have beef steak this morning.  I ran into some server problems this morning and was eventually fixed.  I came home late around 12:30pm and the children had already had a light lunch.  They said they were reserving their tummies for the beef steak I promised them.  So I had to fulfill my promise and we went out to the market searching for fresh beef.

Not much luck finding fatty beef.  Raw Paleolithic style eating needs raw fats.  I went deep into uncharted stalls and found a nice 1 kilo worth of top quality top round cut beef with some good fat on it.

We went home and had the cook prepare the grill.  No need to wash the beef.  Just lay it on the hot grill for some 10 seconds, flip and lay again for 10 seconds then serve.  Ah, very fast, very convenient.

The kids devoured half a kilo of seared beef in a short few minutes.  My 6 year old boy requested for the raw beef.  He savored the raw slice.  He said he likes the raw beef more because it was oh so tender, very easy on is small teeth and jaws.

This evening was the left over 1/2 kilo of raw beef for my dinner.  The kids already ate some dinner but still swarmed on me as I was about to have my dinner.  They were much happier this time the tender top round cut was being eaten bloody raw.  My little girl even used the little pool of blood for sauce.

My camera was available and before the little carnivores could finish off the whole meal we snapped a couple of happy photos.  So much happiness, so much enthusiasm.  My 4 year old second boy exlcaimed, “truly delicious and juicy!”

Raw beef is a true food.  Children with uncorrupted taste buds swear raw beef is better than seared beef.  Natural hygiene principles apply to fresh raw beef.

I plan to pump these kids with more raw animal food choices.  Just this afternoon I bought a new batch of organic raw chicken eggs and already my 6 year old had one as part of his afternoon snack.

I am on a roll with this crusade for better kid nutrition.  I promise to buy goat innards next, liver and kidneys.  My 6 year old just loves goat kidneys.  We will be searing them.

Raw food has made me slim, not underweight

Some people see me as “disappearing” or too thin or looking like a POW.  They just are not used to seeing me slim.

I am slim now. But not underweight. 2 months of raw foodism expects a person to detox. Gets rid of the old unhealthy flesh (detoxing and slimming down), then weight gain to what is normal, then maintain that normal weight. How much do I weigh now? At the digital meter it says 112 lbs. I am 5′ 4″ short. Compute for BMI / Body Mass Index = 19.2 which is NORMAL WEIGHT according to http://www.nhlbisupport.com/bmi/ and I can bet you that website BMI had WHITE PEOPLE in mind.  I am a Filipino who looks primarily Malay and Chinese mixed in.

Seems I’ve been maintaining this 112 so far for 3 weeks.  We will see.  I am adding egg yolks and raw fish to my fruitarian diet.  I just bought 1 kilo of avocado, maybe that will make me put on more weight.

I do feel good at this weight.  Makes me want to exercise, run and climb trees.  So those who think raw food makes you too slim, nope.  Your body has a set point.  I think I’ve reached my set point.

Consuming more raw eggs in my diet

I am somewhat following the advice of Wai in http://www.waisays.com/ regarding adding raw egg yolks in your raw fruitarian diet.  So technically I am not a 100% fruitarian anymore.  I am a raw foodist who eats primarily raw fruits plus some raw eggs and raw fish.

I’ve been doing this for a week now and I’ve gone up to comfortably consuming 3 egg yolks a day.  My transition phase is to use a bit of cooked white rice and put the egg yolks on it.  Everyday I reduce the amount of cooked rice mixed in until I reach zero white rice and just consume the raw egg yolks.

I love raw egg yolk delicious stuff.  The whites don’t taste so good though.  This evening I was a glutton.  I ate Durian around 6pm then at 7:30 pm I ate 5 fertile egg yolks.   Hmmm… I felt too full.  I think I should go down to 3 egg yolks.

I took Dr. Tam’s miracle tea to do a colon cleanse this evening.  This should get rid of that cooked rice.

Delicious Nutritious Raw Pili Nuts from Palawan

This city slicker finally gets to eat a couple of raw pili nuts. Not from Bicol, but from Palawan. Everything I heard about raw pili nuts were true. Truly delicious, maybe nutritious? But awfully hard to open.

I’ve tasted candied pili nuts many times. It is a product usually from the province of Bicol. But I have never tasted pili nuts raw. It is not sold raw in Metro Manila. When I see it in the delicacy stores they are always candied.

It appears that these raw pili nuts have 2 shells. One hard dark purple shell that eventually rots and a second very hard seemingly ceramic wooden brown shell that is dangerously pointed sharp and slippery. Difficult to open fresh pili nuts but not impossible.

This is our technique: With a hammer, mash out the first dark purple covering. It will be squishy if the pili nut is very ripe. Then wash the slimy nut. Better to dry them in the sun so they are not so slippery. Get an old magazine or catalog, the thick kind. Wrap the pili nut to make sure both ends are trapped. Hammer with just enough force to crack open the pili nut to access the delicious raw nut inside. If you hammer too strong, you wind up squishing the whole thing. Use a toothpick to be able to access the raw nut inside. Enjoy.

I think nature made it pretty hard to be able to eat a lot of fresh nuts. From my fruitarian teachings it says nuts should comprise a small amount of your diet. I’m all tired after cracking open 10 nuts by myself. Of course if you had a maid like we do, you could abuse her and ask her to open dozens of nuts for you. That would be gluttony.

My wife just brought home a second batch of pili nuts from Palawan today! Yummy!
