I cooked a Paleo Diet meal: a 2 kilo Roast Beef Sirloin with Sauce

And now for my latest magic trick, I actually cooked a Paleo Diet Meal: a big 2 kilo chunk of grass fed roast beef sirloin. Now my friends at rawpaleoforum.com will be miffed by this little stunt, but it’s for a good cause. My father in law celebrated his 74th birthday and our task for the evening dinner was to provide beef prepared in the Mexican way.

I scrounged Google for recipes. I finally settled for a Youtube video that had a Mexican touch. It was not paleo, but I figured I could get rid of that dang flour so the meal can stay paleo. So here is what I did:

For the soup stock: First I bought more than 3 kilos of bones at Farmers market. They sold it for 70 pesos per kilo. i was even lucky to get quite a good amount of raw bone marrow! So what if this was refrigerated overnight? I ate a good amount of raw bone marrow at the butcher while they were preparing the bones. At home I gathered the raw bone marrow in a bowl. Yummy.

We made the soup stock by putting the bones in a broken pressure cooker and putting it on our charcoal stove. Had it sitting there from 12:30 pm to 4:30 pm.

For the roast beef: I chanced upon the best end part of sirloin, they call madera cut which was exactly 2 kilos. Yummy yellow fat. Bought it whole.

At home I first put sea salt and freshly ground pepper on the muscle sides, rubbed them in. Then I got a wok and seared the muscle sides of the sirloin for some 2 minutes per side. This was to seal / lock the juices in the meat to prepare for roasting. I then popped the whole 2 kilo chunk of meat in the oven running at 150 degrees Celsius. Turned the meat on each side for a total of 1.5 hours. A little later I lowered the temp to 100 degrees Celsius. Got the meat to be served medium rare.

On to the stock as used for broth where the meat was served laying in the broth. In the wok where we seared the chunk of meat, I deglazed it by putting 2 bowls of beef stock in it and put slices of onions, added sea salt and freshly ground pepper, added cumin and later added some fresh cayenne pepper bits. Ta dah, here is your sauce.

After the roasting of the beef, I gathered the drippings and made another batch of sauce. This one with more fresh cayenne pepper bits.

So we served the 2 kilo roast beef sirloin on the table with some cooked carrots with the uncut solid 5 inch wide chunk beef sirloin bathed in our stock based sauce, the taste and smell of cumin dominant.

And what do you know? Everybody liked the roast beef! Clap clap clap clap! Any dork can follow Youtube. Imagine, a raw paleo dieter like me can cook! It’s my first time you know. But this is for my father in law’s birthday, so somebody has to do it.

Other Mexican dishes in the dinner party were spicy prawns. Then burritos. Then a salad. Burritos are not paleo, I did not bring those. The pre-dinner drink was raw avocado blendered with fresh raw coconut milk and raw wild honey from Palawan. Add some ice cubes in your slush and ta dah… it’s like ice cream. The healthy raw avocado ice cream kind.

I also served a healthy lunch for my father in law with raw tuna sashimi and raw sea urchin / uni. Hey, he’s 74, something to celebrate indeed.

The celebration was a total blast. Almost all his children and almost all his grandchildren came. It was a riot of kiddie games and musical performances. My wife played the harp, 12 year old grandson played the guitar and my 5 year old girl played 2 harp pieces. The garden was a good place, in the terrace, under the fan.

Special for the night was the presence of 1 month old and newest grandchild Shawn Andy.

Loren Howe Stresses a Return to Traditional Diets, Less cooking, No Wheat, No Sugar

Awesome 9 minute monologue of Loren Howe just released! At the beginning of this video he rants about those fad diets that have no empirical data… no traditional wisdom… no proof cultures ever used them…he seems to be referring to you VEGANS.

Further on into the video Loren discusses how very recent sugar has been in use, so please replace that with small amounts of raw honey. And that wheat is such a big bad non-food with gluten being a number one allergen, strike that out too. And that milk, even raw milk has limited appeal in that genetically speaking, only a select few are genetically capable of completely digesting casein in milk. I did my own raw milk experiments and fartedly failed miserably.

Next Loren points out that today people use plant oils and hydrogenated oils and cook their food to kingdom come. Traditional cultures pickled, fermented, lightly cooked and ate raw foods.

Loren rants at factory farming. Just how important organic, wild, and FRESH FOOD really is. Gosh, in my raw paleo diet, a food just has to be fresh, this is why I relocated my office beside farmer’s market!

He encourages people to make that change and feel the physical benefits. What’s best is the mental clarity. It’s true, a clean nutritious diet makes you smarter.

Whatever Loren Howe says in this video I agree with completely. I’ve done everything he has said in this video and well more advanced than what he said in this video. And it all works, for me, and my family.

So I’d like you my friends and family to try and go for it. Make that change to go back to a traditional diet. Of course I think the best one is Paleo Diet, older still, raw paleo diet. But you can start with Nourishing Traditions, the BIG recipe book. Keep it in your kitchen!

Tropical Fruits on the 1st of July 2010: Watermelon, Papaya, Avocados, Santol, Guava, Indian Mangoes

Yesterday was the 1st of July 2010 and these are the fruits in season now in Manila, Philippines. We bought these at the Marikina wet market.

The bottle in the middle is bagoong / alamang – small shrimp paste that goes well with the indian green mangoes.

What these fruits are good for?

Watermelon is for hydration and bowel movement.

Papayas are the 2nd highest source of vitamin C, digestive enzymes and good for bowel movement.

Avocados provide plant fats.

Santol has a certain taste to it but doesn’t make you full. I don’t know what it’s good for yet.

Guava is the highest source of vitamin C.

Indian mango is the 3rd highest source of vitamin C.

None of these are sugar bombs.

How to Eat Organ Meat: Eat Tiny Dulong Fish with Duck Eggs

Here is a nutritious idea for those who need to consume raw organ meat. Eat tiny dulong fish ala sashimi. These are ultra tiny fish where a spoonful is dozens of fish and a whole meal is hundreds of whole tiny fish, heads, innards, and all. With this much nutrition, you easily grow full. Try it. It’s easy.

If you are not accustomed to fully raw, you can make an omelet with some duck eggs in this example.

What really rocks and is nutritious is fully raw. I uploaded full size 2048 pixels wide pics here so you can blow it up and appreciate just how tiny these dulong fish are. There is one non-dulong fish that looks much bigger. I ate that too.

Dulong is salty by itself, so no need to add salt. When we buy at the market I just get 1/4 kilo at a time. Cheap at 40 pesos for 1/4 kilo. I can’t eat much of the dulong without the egg for fat. The dulong is too lean, too much protein, so you need to add your egg to balance off the protein so you can eat more of it.

CCHR: Psychiatrists target infants as mental patients

A new study, published in the American Journal of Psychiatry and headed by psychiatrist John H. Gilmore, professor of psychiatry and Director of the UNC Schizophrenia Research, claims to be able to detect “brain abnormalities associated with schizophrenia risk” in infants just a few weeks old. We would like to point out the obvious flaw in this bogus study; there is no medical/scientific test in existence that schizophrenia is a physical disease or brain abnormality to start with. There is not one chemical imbalance test, X-ray, MRI or any other test for schizophrenia, not one. So with no evidence of medical abnormality to start with, the “associated with schizophrenia risk” amounts to what George Orwell called Doublespeak (language that deliberately disguises, distorts, misleads)—it means nothing.
