Some few nights ago I just needed a raw paleo diet dinner for myself and just raided the refrigerater for whatever was in there. First I saw we had some 4 day old hasa hasa fish filet ceviche using some sweet Japanese vinegar. Then I saw we had raw sea urchin. As I was eating these two items, I thought there was something missing and remembered I bought some organic tiny cucumbers from our organic farmer Gil Carandang. These tiny cucumbers tasted delicious, way way better than the big ones. Then I thought, I had all the fun ingredients for a sushi roll and brought out some Nori. Well, Nori is not raw, but hey, we can’t be perfect all the time. It’s fun and totally delicious and satisfying. 6 rolls were enough for me. This is the look and state of our April 2013 home made organic ice cream / raw ice cream with how to guide, sourcing and pictures. It is summer and ice cream just fills in that need for cool raw fats and hydration and nutrition. Purist raw paleo dieters may not like this, but I have an entire house hold to feed. This organic raw ice cream was made possible via a convergence of our house hold contributions: SIL for her labor, ingenuity, and resourcefulness she also sourced the vanilla beans and vanilla extract. Wife, for her raw coconut sugar and sometimes we use raw cacao nibs. I buy the organic raw duck eggs, the organic raw coconut milk / organic raw goat milk / organic raw cow milk, the grass fed butter (Anchor brand), dash of sea salt / real salt / himalayan salt. Put them all together and we have raw organic ice cream that we can safely and confidently feed our children and the entire house hold. Our discovery road trip last Saturday to find a swimming hole yielded a precious gem of a find: Off Grid Cabins, Restaurant, Tent Camping, Waterfalls resort of sorts called Jariel’s Peak at Km 94 on the Marikina-Infanta Road in the area called Little Baguio, Brgy Magsaysay, Infanta, Quezon. The restaurant front is a favourite of motor bike groups who frequent this road on weekends and holidays. It is this off – the – grid vacation set up that I am very interested in. I’m lately investigating the benefits of getting off – the – grid for vacations, recuperation, healing. Our electric, electromagnetic, EMF polluted, ground current polluted urban lives are just an epidemic waiting to happen if not already happening to many people. It’s just too much I have resorted to turning off wifi at home and thinking of building myself a Faraday cage for sleeping.Continue Reading

Being a health nut, I’m always looking for more natural, more pristine, without electricity. Yesterday Saturday I asked the kids if they would like to go for a swim in a cool natural fresh mountain spring water swimming hole along the Marikina Infanta Road. And being bored kids in the summer vacation heat they all said yes! Had the nannie pack some food and off we went 10 am. I was not sure if that swimming hole would still be there. The last few times we tried looking for it, we missed it or we did not go far enough, or at one time it may have been buried with the Ondoy rains in 2009. April 6 and 7 was my drive to and from Dingalan Bay in Aurora province. On the way I passed by a long bridge and noticed a picnic type resort of sorts below the bridge with hundreds of people enjoying themselves in a nirvana of joy at this enormous natural mountain spring water gushing from the foot of these Sierra Madre mountains where this river starts / begins.
